Spaghetti alla Nerano ("zucchini pasta") is one of the many examples of brilliant Italian vegetable pastas that turn readily available produce into a luxurious, deeply flavorful sauce.

It uses zucchini to its full potential- somehow both meaty AND bright. Which is why this one is also a favorite of Milk Street Education Director, aka "zucchini queen," Rosie Gill.

The key is to create a base of what Rosie calls "zucchini velvet"– sauté zucchini to develop depth of flavor, then blend it with reserved pasta water and garlic. That's all tossed with plenty of pecorino and a little butter, so everything gets thoroughly emulsified, creamy and clingy.
