Ingredients for recipe from The Prudhomme Family Cookbook:
Stuffing:
½ cup finely chopped onions
¼ cup finely chopped green bell peppers
1 tablespoon very finely chopped garlic
2 teaspoons sugar
2 teaspoons salt
2 teaspoons prepared mustard
1 teaspoon ground red pepper (preferably cayenne)
1 teaspoon black pepper
1 teaspoon white vinegar
Seasoned mustard:
1 teaspoon prepared mustard
1 teaspoon sugar
½ teaspoon salt
½ teaspoon black pepper
(4-pound) boneless sirloin or other good-quality boneless beef steak, about 2 inches thick
1 medium onion, peeled and cut into eighths (about
½ pound)
1 cup coarsely chopped green bell peppers
1½ cups Beef Stock
1 tablespoon all-purpose flour
Hot Basic Cooked Rice:
(For 6 people)
2 cups uncooked rice
2½ cups Basic Stock
1½ tablespoons unsalted butter (preferred) or margarine, melted
1½ tablespoons very finely chopped onions
1½ tablespoons very finely chopped celery
1½ tablespoons very finely chopped green bell peppers, optional
½ teaspoon salt
⅛ teaspoon garlic powder
A pinch each of white pepper, ground red pepper (preferably cayenne), and black pepper
