1 cup (284 g) raisins
1 19-ounce (540 g) can chick peas
2 cloves garlic, chopped
1 tablespoon fresh coriander, chopped
1 large tomato, diced
1 red onion, diced juice of 1 lemon juice of 1 orange 4 tablespoons olive oil
2 cups (480 ml) unsalted chicken broth or water

Swordfish Brochettes
11½ pounds (681 g) swordfish, trimmed and cut into
11/2-inch (38 mm) cubes
1/4 cup (60 ml) olive oil
2 teaspoons honey
1 tablespoon lime juice
½ recipe of Emil's Aromatic Herb Mix
2 red peppers, cut into 112-inch cubes

Abdul's Secret Spice Mix
1/2 teaspoon ground cinnamon
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon freshly ground black pepper
14 teaspoon ground nutmeg
1½ teaspoon red pepper flakes
1 teaspoon saffron threads
1 teaspoon

Emil's Aromatic Herb Mix:
4 garlic cloves, chopped
2 tablespoons parsley, chopped
2 tablespoons coriander leaves, chopped
1 teaspoon dried marjoram
1 teaspoon salt
12 teaspoon freshly ground black pepper
18 teaspoon cayenne pepper
1½ teaspoon dried thyme
1½ teaspoon saffron threads)

2 ounces (60 ml) blood-orange juice (regular orange juice can be substituted)
