Today in Mama Vera’s kitchen, we’re making a creamy, cheesy, Southern-style favorite: Cheesy Rotel Spaghetti! This comforting casserole-style spaghetti is loaded with tender pasta, savory meat, melty cheese, and the bold tomato-and-green-chile flavor of Rotel. It’s easy, family-friendly, budget-friendly, and perfect for a weeknight supper, church potluck, family gathering, or anytime you need a hearty dish that feeds a crowd.
Mama Vera’s Cheesy Rotel Spaghetti brings together old-fashioned comfort food with a little zesty kick. It’s the kind of recipe that tastes like something you’d find on a farmhouse table in Appalachia — simple ingredients, big flavor, and plenty of cheesy goodness.

Ingredients:
1 1/2 lb chicken, cooked and shredded
16 oz spaghetti
1/4 cup butter
1 medium onion, chopped
8 oz Velveeta cheese
10 oz can Rotel, undrained
1 1/2 cups shredded Colby Jack cheese
2 green onions, sliced, for garnish
Directions
Cook the spaghetti according to package directions. Drain and set aside.
In a pan, melt the butter over medium heat. Add the chopped onion and cook for about 5 minutes, until softened.
Add the cooked shredded chicken, Velveeta cheese, and undrained Rotel to the pan. Cook and stir until the Velveeta is melted and everything is creamy and combined.
Add the cooked spaghetti to the cheese mixture and stir until well coated.
Pour the mixture into a greased baking dish.
Top with shredded Colby Jack cheese.
Bake at 350°F for 25 minutes, or until hot, bubbly, and the cheese is melted.
Garnish with sliced green onions before serving.
Notes
This is a creamy, cheesy, slightly zesty Southern-style spaghetti casserole. The Rotel gives it just enough kick without running folks off from the supper table. 😄
