Ingredients:
1 pound boneless, skinless chicken breasts – diced into bite-sized pieces
1 package fresh chicken and garlic Tortellini
2 tablespoons olive oil – for sautéing the chicken and vegetables
1 medium onion – sliced thinly for sweetness
1 green bell pepper – sliced for crunch and color
1 red bell pepper – sliced for added sweetness
2 cloves garlic – minced for aromatic goodness
1 teaspoon Italian seasoning – to enhance the flavor
Salt and pepper – to taste
1 cup provolone cheese – shredded for that melty goodness
1/4 cup heavy cream – to create a rich sauce
Fresh parsley – chopped, for garnish
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced chicken breasts, season with salt, pepper, and Italian seasoning, and cook until browned and almost cooked through.
Now add the sliced onion, green bell pepper and red bell pepper. Sauté for about 5-6 minutes until tender. Add minced garlic and cook for an additional minute.
Add the tortellini to the pan and add 1/2 cup water, cover and cook on medium low for 3-4 minutes.
Now add half the cheese and pour in 1/4 cup of heavy cream, and stir to combine.
Sprinkle remaining cheese over the mixture, cover the skillet, and reduce heat to low. Cook for about 3-4 minutes until the cheese is melted and bubbly. Garnish with freshly chopped parsley before serving.
