Swedish Sugar Dream Cookies (Drömmar)
These classic Swedish “Dream Cookies” live up to their name—crispy on the outside, melt-in-your-mouth tender on the inside, and unbelievably easy to make. Known as Drömmar in Sweden, these sugar cookies get their magically airy texture from a simple old-world ingredient: baking ammonia (also called baker’s ammonia or hartshorn).
They’re the perfect Christmas cookie, afternoon coffee treat, or cozy addition to any dessert tray. With just a few pantry staples, you can whip up a batch that tastes like it came straight out of a Scandinavian grandma’s kitchen.

🍪 Swedish Sugar Dream Cookies (Drömmar) – Recipe
Ingredients
1/2 cup + 2 tablespoons unsalted butter, softened
1 3/4 cup granulated sugar
1 teaspoons vanilla extract
1 teaspoons baking ammonia (baker’s ammonia / hartshorn)1
2 cups all-purpose flour
Optional: a sprinkle of coarse sugar for the tops
Instructions
1. Cream the Butter & Sugar
Beat the butter and sugar together until light, fluffy, and pale. This step helps with the signature melt-in-your-mouth texture.
2. Add Vanilla
Mix in the vanilla extract.
3. Activate the Baking Ammonia
In a small cup, stir the baking ammonia into the warm water.
(It will fizz a bit—this is normal and part of the magic.)
Add this mixture to the butter and sugar and mix until fully combined.
4. Add the Flour
Stir in the flour until the dough comes together.
It will be soft but not sticky.
5. Shape the Cookies
Roll dough into small balls (about 1 tablespoon each).
Place on a cookie sheet lined with parchment paper—they will spread slightly.
Optionally sprinkle with coarse sugar.
6. Bake
Bake at 300°F (150°C) for 18–22 minutes, until the bottoms are lightly golden but the tops remain pale.
Let cool completely. They will crisp and “dry” into their dreamy texture as they cool.
✨ Tips for Perfect Drömmar
Don’t substitute the baking ammonia—it’s the key to the classic light-crisp texture.
Store in an airtight tin for up to 2 weeks—they actually get better after the first day.
