The BEST Crispy Onion Straws
Today I am making homemade onion straws, aka fried onion strings. These are much thinner than traditional onion rings. They are light and crispy and are perfect on their own or as a burger topping--stay tuned for my Smashburger video coming soon!

CRISPY ONION STRAWS
2 white onions, sliced very thinly into rounds or strips
Buttermilk or regular milk with a splash of white vinegar to cover the onions (amount will depend on the size bowl you use)
1.5 cups flour
1 tsp. salt (plus more for seasoning after the onions cook)
1/8 tsp. black pepper
1 tsp. paprika
1 tsp. garlic powder
peanut oil for frying
Place the sliced onions into a bowl and cover with buttermilk. Toss to coat and allow to soak for a few minutes. Heat your oil in a high sided pan until it reaches about 375*F. Meanwhile, whisk together the flour, salt, pepper, paprika, and garlic powder. Using tongs, carefully place a small amount of the soaked onions into the flour mixture. Place into the oil to fry for a few minutes until golden brown. (They should lightly sizzle immediately upon touching the oil.) Remove the onion straws to a paper towel lined plate to drain. Salt to taste while they're still hot. Continue breading and frying the onion straws in batches so you don't crowd the pan. ENJOY!
