DUBAI CHOCOLATE CHRISTMAS TREE
Place a sheet of parchment paper on your work surface then lightly sprinkle with flour. Place one sheet of puff pastry on the paper and flour that lightly as well. Roll out slightly into a tall rectangle. Transfer the parchment paper and pastry to a cookie sheet. Spread several tablespoons of pistachio cream on top in a thin, even layer. Roll out the other piece of puff pastry dough to match the first and carefully place on top. Use a pizza cutter or sharp knife to cut out your tree shape. (I made my diagonal cut a little too deep, so I ended up making 1 big tree and 2 little trees--which worked out perfectly!). Cut lines horizontally into the dough on both sides from the bottom of the triangle to the top about 1 inch apart leaving about a 2 inch portion down the center of the tree uncut. Twist each section upwards a few times and press into the parchment paper slightly. Use excess dough from the perimeter of the pastry to make a tree trunk (or a star for the top!) and gently press into the tree to attach it. Beat 1 egg in a bowl and brush on top of the pastry. Bake at 375* for about 15-17 minutes or until golden brown and cooked through.
Melt about 1/3 c. semi sweet or milk chocolate chips with 2 tsp. coconut oil in a microwave safe bowl until smooth (stir every 30 seconds--should only take about a minute). Use a spoon to drizzle the melted chocolate over the baked pastry. Sprinkle with chopped pistachios, if desired. Alternatively, you can sprinkle powdered sugar over the top using a fine mesh sieve. ENJOY!
