Today I'm using up all the holiday leftovers to make these delicious Thanksgiving Stuffed Shells!

Boil one box of jumbo shell pasta according to package directions. Add 2 Tbsp. olive oil and a generous pinch of salt to the water as they cook. Drain and set aside to cool slightly. Mix together leftover mashed potatoes, corn, and stuffing. Fill the pasta shells with a heaping spoonful of the mixture then place into a 13x9" casserole dish with about 1.5-2 cups of chicken broth in the bottom. Sprinkle some bits of stuffing and pieces of corn overtop and garnish with dried parsley. Bake at 275* for about 10-15 minutes or until heated through and the stuffing pieces get a little crispy on top. Drizzle with hot turkey gravy and enjoy!
