SPAGHETTI SAUCE
1 large onion, peeled and cut in quarters
2-3 carrots, peeled & roughly chopped
6 garlic cloves, minced
2 Tbsp. olive oil
2 28-oz. cans tomato sauce
2 28-oz. cans tomato puree
2 bay leaves
salt and pepper to taste
2 Tbsp. sugar
1 Tbsp. dried Italian seasoning
Meatballs (see recipe below)
Mild Italian Sausage links

Heat olive oil in large pot over medium low heat. Add carrots and onions and sauté a few minutes until they start to caramelize slightly. Add the minced garlic for about 30 seconds or until fragrant. Pour in tomato sauce and puree, plus two 28-oz. cans of water. Season with bay leaves, 1 tsp. salt, 1/4 tsp. pepper, 2 Tbsp. sugar, and 1 Tbsp. Italian seasoning. Bring to a boil then simmer on low. Add the baked meatballs and raw sausage links after the sauce has cooked for about an hour. Continue to simmer for about 4-5 more hours. Stir occasionally and add water and additional seasonings as needed. Remove and discard the carrots, onions, and bay leaves with a kitchen spider or slotted spoon before serving.

Meatballs
2 lbs. ground beef (80/20)
1 cup grated parmesan cheese
1 cup seasoned breadcrumbs
2 eggs
salt and pepper to taste
1/2 tsp. garlic powder

Preheat oven to 350 degrees. Prepare baking sheet with aluminum foil and baking spray for easy cleanup. While sauce comes to a boil, mix ground beef, parmesan cheese, breadcrumbs, eggs and seasonings by hand in a large bowl. Roll out meatballs in desired size. Bake for 25 minutes. Add to sauce to simmer 4-5 hours.

This recipe makes enough sauce to feed a crowd! We like to eat ours over angel hair or cavatelli pasta cooked al dente according to the package directions. You can also use the meatballs and sausage for sandwiches. The leftover sauce can be used throughout your week for lasagna, stuffed shells, baked ziti…so many dishes! OR you can portion out the sauce into gallon freezer bags and use it another time. Enjoy!
