My family has been under the weather PLUS it's about 15 degrees outside right now and snowing, so we are definitely in need of something comforting! Today I'm sharing homemade chicken noodle soup and oatmeal chocolate chip cookies.

CHICKEN NOODLE SOUP
3 lbs. bone-in, skin-on chicken thighs
3 garlic cloves, peeled and halved
1 large white onion, peeled and quartered
8 large carrots—3 peeled and roughly chopped, 5 peeled and cut into thin coins
Salt, pepper, dried parsley
2 bay leaves
8 oz. egg noddles
Place chicken into a large pot. Cover by about an inch with cold water. Bring to a simmer. Add the garlic, onion, 3 chopped carrots, and bay leaves. Season with salt, pepper, and parsley. Simmer on LOW for 2 hours, stirring occasionally. Use a strainer or slotted spoon to remove everything from the broth and place it into a bowl so the chicken can cool. Add the carrot coins to the simmering broth and cook for about 10 minutes. Add the egg noodles and cook for another 8-10 minutes. While the carrots and noodles cook, use your hands to remove the skin and bones from the chicken meat. Shred or chop up the meat and place it back into the pot. Check for seasoning and add more salt if desired. Garnish with more dried parsley and serve.
