Hello, welcome to EZ Eatery! Today we are making the best broccoli cheddar soup I have ever had in my whole entire life and we are making it in the pressure cooker, so you know it is so quick! I love that! This broccoli cheddar soup literally only takes 4 minutes to cook in the pressure cooker. Can't beat that!
BROCCOLI AND CHEDDAR SOUP:
2 TBSP Butter
1 Small Yellow Onion
2 Celery Stalks
2 Whole Carrot or 10-12 Baby Carrots
1 Head Broccoli or 4 Cups
4 C Chicken Broth
1 TBSP Garlic
2 C Heavy Cream
1/4 C Corn Starch
1/4 C Cold Water
8 Oz Sharp Cheddar Cheese or 3 Cups Shredded
Salt/Pepper/Crushed Red Pepper Flakes to Taste
Chop up all onion, celery, carrots and broccoli into small pieces. In your pressure cooker turn it on the sauté function. Add butter. Once melted, add vegetables, chicken broth, pinch of salt, pepper, garlic and crushed red pepper flakes. Toss to combine. Turn pressure cooker to cook (make sure valve is closed) and pressure cook on high for 4 minutes. When 4 minutes are up, let stand for 5 minutes and slowly release steam. Add heavy cream, shredded cheese, and slurry of corn starch and cold water. On sauté feature, stir soup for 5 minutes until thickened. That is it! Enjoy!
This would be absolutely delicious in a bread bowl topped with a bit if cheese...oh my!
