Sun-Dried Tomatoes With Broccoli Pasta

Well, you can now call me the salad or soup guy. I am uploading more of these recipes because everyone is requesting more. So, here you have it. Please enjoy.

When it comes to an office lunch, this recipe beats them all. It heats up really fast in the microwave or just has it on the cold side. This dish will fill you up and keep you going all day long. One meal with everything you need for a healthy meal.

As you can see on the video that I cook the pasta only halfway, then finish it off by re-cooking it in the garlic sauce. In this way, you will infuse the pasta together and thus give you a more flavourful taste. Also, remember not to use any other salt other than the salty water in the pasta water.

Ingredients

1/2 pkg. - Bow-tie pasta or other
2 cups. - Broccoli, bite-sized pieces
1/2 cup - cherry tomatoes, sliced
2-3 tbsp. - Olive oil
2 tbsp. - Garlic, minced
1/2 cup - Sun-dried tomatoes
1/4 cup - Parsley, chopped
1 -2 tbsp. - Parmesan cheese, grated
1/4 cup - Black or green olives, sliced

Salt and pepper to taste

Options - Hot red pepper flakes, lemon juice, goat cheese, Parmigiano cheese
