Happy St. Patty's Day! This time, I revisited an experiment I tried last October, and smoked the corned beef round at 275°F for and hour and a half. Then I covered it, added a beer, mustard, and seasonings, and baked it at 325°F for an additional two hours. The result is fantastic!!
Served it with boiled cabbage and potatoes, for a proper St. Patty's Day feast.
Intro music - traditional Irish folk tune, recorded live at McNamara's Tavern, Nashville TN, October 2011. Performers names unknown. They were extremely good, and extremely loud.
