Today, we are smoking a spatchcock chicken on our Slow n sear kettle. We got the kettle fired up between 300 to 400° using Kingsford charcoal and apple wood chips for the smoke flavor. This chicken took about an hr and twenty-five minutes total before reaching our target temperature of over 165°.
