Reversed seared Elizabeth Farm’s Mangalitsa pork chops. Wow! What a flavor! They call this the Kobe Beef of pork!
• Started with 2 nice Mangalista pork chops about 10oz each.
• Seasoned them with just salt around 2 hours before the cook.
• Set up the Slow ‘N Sear Kettle with the Slow N Sear insert and started the cook when the temp was about 425.
• Once they got close to 100 degrees, I flipped them to promote even cooking.
• Once they got to 130 I put them over direct heat to add some color.
• Once they got close to 142 we pulled them off to rest.
Summary: These Mangalista pork chops had some amazing flavor. The fat rendered nicely and had a really nice flavor.
