Rack of Pork is one of my favorites! Price is right, the amount of leftovers is great! Plus it is so juicy and tender! Costco carries these once or twice a year and I stock up!
• Started with a nice 8 bone rack of pork from Costco.
• Seasoned with Pork Barrel seasoning from Costco.
• Set up the Big Joe for indirect cooking for the entire cook, deflection plates on the bottom
and both racks at the highest position.
• Brought the grill up to 350F degrees using the ChefsTemp S1 and Breezo Fan to hold temps.
• Placed the Rack of Pork on the top racks and probed for the entire cook. I was shooting for
internal temperature of 145 degrees before pulling off the grill.
• Once the temp reached about 105F, I did turn over to promote even cooking.
• Pulled the Rack of Pork and covered for about 20 minutes before cutting.
Summary: The Rack of Pork turned out amazingly tender and juicy. The ChefsTemp S1 and Breezo Fan are game changers to make your grill a “Smart Grill”.
