Blackstone Betty kept it simple and full of flavor with these garlic butter bacon mushrooms sizzling on the griddle. 🥓 Between the crispy bacon, buttery mushrooms, and fresh garlic, this easy side dish came together rich, savory, and perfect for any cookout spread.
Ingredients
6 slices Wright’s Bacon, chopped
2 tbsp butter
1 tbsp olive oil
3 garlic cloves, minced
16 oz baby bella or white mushrooms, cleaned and halved
1 tsp Blackstone Steakhouse Seasoning
1 tbsp fresh parsley, chopped (plus more for garnish)
¼ cup grated Parmesan cheese (optional)
Directions
1. Preheat your Blackstone griddle to medium heat. Add a light drizzle of olive oil to help prevent sticking.
2. Add the chopped bacon to the griddle and cook until crispy, allowing the fat to render. Move the bacon to one side, leaving some of the bacon drippings on the griddle.
3. Add the butter and mushrooms directly into the bacon drippings. Cook for 5–7 minutes, stirring occasionally, until the mushrooms are golden brown and tender.
4. Stir in the minced garlic and Steakhouse Seasoning. Cook for another 1–2 minutes until fragrant.
5. Add the cooked bacon back to the mushrooms and toss everything together.
6. Finish with fresh parsley and Parmesan cheese, if desired. Serve hot.
