Today let’s take a look at the Siempre line of Tequilas that is fairly new and owned by Monica Sanita and Alex Lecroix. The distillery is in the Lowland town of Tequila, though 50% of the agave piñas are harvested in Arandas, a Highland region. The red clay soil and elevation of the Highland region produce a tequila that’s different than those grown in the rich volcanic earth of the valley or Lowlands. In the highlands (Los Altos) there are different minerals in the soil, cooler nights, and more rain, so Highland agaves tend to grow larger and mature slowly, producing sweeter, fruity tequila. Meanwhile, agaves grown in the Lowland region (El Valle) are usually drier, rounder with more earthy, vegetal, and woody flavors. It’ll be interesting to see if this 50/50 combination has done anything special to the final tequilas. We’ll start with the $43 Blanco is distilled to around 100 proof before being brought down to 80 proof by the addition of volcanic spring water. Next, we’ll see what 6 months of maturation in oak barrels (with the addition of a bit of Extra Añejo) has done to the $50 Reposado. Finally, we’ll end with the $57 Añejo that’s spent 24-36 months in those barrels. If you want to know which exact bottles I’m reviewing, the Blanco has a laser etched code on the glass of “LOTE: CBN 371 21/10/20” – so it was bottled on 10/21 of 2020. The Reposado’s reads “LOTE CREPN 248 02/09/20,” so it was bottled on 9/2/2020. And the Añejo’s code was really hard to see on the dark glass, but it read “CANEN 119 28/09/20” so it was bottled on 9/28/2020. Regardless of you finding the exact batches these came from, I have a feeling they’ll all be fairly similar, and you’ll be happy with them.
