You might have noticed there are missions popping up in battles, this is the main way they get any sort of variety to them. As bonds increase, you will have to go into a battle and complete a missions to progress them to the next stage. This is nice because it gives you something to do, like defeating officers with specific characters and whatnot, it lets you switch to them for more variety in the battle too.
However, some of the missions are really annoying, like landing a co-op musou to defeat an officer can be finnicky to do during the heat of combat with enemy and ally running all over the place. It also means you can't really grind up bond if you have no one to fight, so you have to do all your bonding as you take over the country, waiting until the last area is taken to do it and then grind up all the bonds you wanted won't work.
Also you seem to have to have some characters in the same room in a castle to get them to bond sometimes, particularly for marriage. So if you're trying to get your Strategist married, you'll have to take them out of that position, and the game really doesn't tell you what the next "step" is, you just have to figure it out. So for example when I was trying to get giga chad Hanbei to knock up Oichi and dab on Katsuie, I had their relationship just never going up despite going into battles all the time because he was set as Strategist, and I had to take him out, put him in the same room with her, and even then they didn't get a mission mid-battle together until much later.
It's just more finnicky than I would like it to be.
