Almost failed with my method, but we made it work!
• Started with 2 prime pork chops from Willaur Farms.
• Seasoned with pepper, garlic and onion powder 2 hours in advance.
• Set up the SNS MasterKettle with the charcoal baskets in the middle and used the rotisserie ring to get the pork chops higher above the fire.
• Was shooting for a grill temp of 400F degrees and placed the pork chops on the grates.
• Once it passed 80F degrees on the MeatStick V we checked it to see how it looked.
• We flipped them when they were around 100F and I was not happy how hot I had the fire. I removed the rotisserie ring to get some color on the pork chops.
• Pulled them when they hit around 140F I pulled them and they rose to above 150F.
Summary: The Rotisserie ring is usually my go to for skin on chicken and pork chops, but this was the first time using the baskets in combo with the ring I may need to just make a larger pile of charcoal to get a hotter fire. These pork chops were still very good because of the quality of but almost failed on this cook! Sometimes you have to improvise!
