For years I thought predestination meant God picked individuals for heaven or hell before they were born.

And Paul says this plan is fulfilled in the Messiah. The Messiah is the chosen one. And if you're united to him, you share his status.
Predestination describes God's eternal plan to bless the world through the Messiah. It's the plot of Scripture, not a divine sorting hat.
