I am not a Chef just a Home Cook. I make simple and easy recipes.
I grew up on garden food and southern home cooking. I will be sharing some recipes that my Momma made and other family recipes and things I made for my family when my kids were growing up. I also look for new things to make online or recipe books and will make it and give it a try.
If you have a YouTube channel and make any of my recipes especially those I say are Family Recipes I ask you to tell where you got the recipe from and not pass it off as your own. I always give shoutouts if I try a recipe from another YouTube channel..it is only right to do so.
I DO NOT SUB FOR A SUB OR STAY CONNECTED SO DO NOT ASK. ANY COMMENTS LIKE THAT WILL BE DELETED AND BLOCKED. Now that being said, If I like content on a channel I will subscribe
I got this recipe from Southern Living Magazine.
Pineapple Sunshine Cake Recipe:
Ingredients:
Baking spray with flour
1 (15.25-oz.) pkg. yellow cake mix
3 large eggs
1/2 cup vegetable oil
3 cups whole milk, divided
1 (20-oz.) can crushed pineapple in juice, undrained
1 (8-oz.) pkg. cream cheese, at room temperature
1 (5.1-oz.) pkg. vanilla instant pudding mix
1 (8-oz.) container frozen whipped topping, thawed
1/2 cup sweetened toasted shredded coconut, toasted
Directions:
Preheat oven to 350°F. Coat a 13- x 9-inch baking pan with baking spray with flour.
Beat cake mix, eggs, oil, and 1 cup of the milk in a large bowl with an electric mixer on medium-high speed until smooth, about 2 minutes. Pour batter into prepared pan, spreading into an even layer.
Bake in preheated oven until a wooden pick inserted in center comes out clean, about 20 to 25 minutes.
Poke warm cake all over using handle of a wooden spoon or a straw. Pour crushed pineapple with juices over warm cake, spreading evenly with a spatula. Let cool completely in pan about 1 hour.
Whisk together cream cheese and 1 cup of the milk in a large bowl until smooth, about 1 minute. Gradually add pudding mix and remaining 1 cup milk, whisking until smooth and thickened, about 2 minutes more. Pour pudding mixture over cooled cake, spreading into an even layer.
Top with thawed whipped topping, and sprinkle with toasted shredded coconut. Refrigerate 2 hours before serving.
