I am not a Chef just a Home Cook. I make simple and easy recipes.
I grew up on garden food and southern home cooking. I will be sharing some recipes that my Momma made and other family recipes and things I made for my family when my kids were growing up. I also look for new things to make online or recipe books and will make it and give it a try.
Lemon chicken with Potatoes Recipe:
Ingredients:
2 to 3 lbs chicken thighs
1 tsp salt
1 tsp lemon pepper seasoning
2 TBSP light brown sugar
1 1/2 tsp Italian seasoning
1 lemon sliced
1 medium onion sliced
1 lb baby red potatoes cut in quarters
2 TBSP butter or margarine
Directions:
You can use an oven safe skillet for this and make it a one pot meal.
Heat oven to 400°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
Meanwhile, in 10-inch nonstick skillet, melt 2 tablespoons of the butter over medium-high heat. In small bowl, stir together brown sugar, Italian seasoning, salt and lemon pepper. Sprinkle over chicken thighs.
Cook chicken thighs in skillet 3 to 4 minutes on each side or until golden brown and crispy. Drizzle some butter from the pan over the top of chicken.
Arrange chicken thighs, potatoes, onions and lemon slices in baking dish.
Bake 30 to 40 minutes or until potatoes are tender and juice of chicken is clear when thickest part is cut (at least 165°F).
