I am not a Chef just a Home Cook. I make simple and easy recipes.
I grew up on garden food and southern home cooking. I will be sharing some recipes that my Momma made and other family recipes and things I made for my family when my kids were growing up. I also look for new things to make online or recipe books and will make it and give it a try.

Antipasto Salad Recipe:
Ingredients:
1 lb. of rotini
3 tbsp. of Romano grated cheese
salt & pepper to taste
8 oz. of fresh mozzerella marinaded balls
1/2 lb. of genoa salami chopped
2-3 oz. of black olives rough chop
1 pint of cherry tomatoes halved
fresh basil handful chopped
fresh parsley handful chopped
green onions chopped a few stalks
6 oz. of marinated artichoke hearts chopped
6-7 pepperoncini’s chopped
1 tbsp. of white wine vinegar and a splash of olive oil to add to the pasta once it’s drained and rinsed.

Dressing Ingredients:
1/2 cup of olive oil
4 tbsp. of red wine vinegar
1 garlic clove smashed and minced or 1 teaspoon
4 tbsp. of mayonnaise
1/2 tsp of sugar
Mix together well. Set aside.

Directions:
Cook noodles according to the box directions. (Salt the water about half a tsp)
Drain pasta and rinse with cold water to stop cooking process.
While the pasta is boiling chop all of the rest of the ingredients.
Add a splash of olive oil and white wine vinegar to the pasta and toss together.
Add the pasta into the large bowl and stir in the other ingredients and stir in dressing. (I added in the oil from the mozzarella balls too)
Cover the antipasta salad and chill at LEAST 3 hours and best overnight.
Stir again before serving.
