Mayonnaise, salad dressing, margarine, and even ice cream are examples of foods that need special ingredients to mix oil and water together. One way to do this is by using food surfactants.
Surfactants are small molecules that have properties to interact with both oil and water.
However, the most effective surfactants are often made through chemical processes, even if the raw materials originally come from natural sources.
PICKFOOD was created to find an alternative to food surfactants using tiny solid particles called pickering particles. We will develop pickering particles from natural food grade ingredients which are effective without the need for chemical processing.
Our goal is to understand how these particles can be used in food production. We develop pickering emulsions to make new food products that are safe and healthy.
