Here are meatballs using ground chicken. Seasoned with asian flavors from the Philippines. You can fry or bake the meatballs. I serve with some ramen.
Ingredients:
1 pound of ground chicken (I used 100% breast meat)
a small knob of ginger chopped or 1/2 teaspoon ground ginger
5 small cloves of garlic chopped
1 or 2 Tablespoons of cilantro stems chopped
3 Tablespoons Fish Sauce
1 Tablespoon Soy Sauce
(I wish I had used all fish sauce, you can use all soy sauce if you must)
2 jalapeños chopped
2 Tablespoons brown sugar or white sugar would be fine as well
1 beaten egg
2 scallions chopped
1/4 cup lime juice or any vinegar
1/2 cup to 3/4 cup bread crumbs
(I think 1/2 cup would have been enough)
Mix all ingredients and allow to marinate for an hour.
Bake @ 400 for 20 minutes or maybe 15 minutes.
Or you can pan fry them.
Serve with rice or noodles.

Making the noodle side, I soaked a package of ramen in warm water until soft. Then I heated up a pan, used some oil and put my noodles and Walmart Sitr Fry Vegetables into the pan. After cooking a few minutes, I sprinkled the seasoning packet over the pan and added some Hoisin Sauce. I had the veggies that I was going to use out of the frozen package sitting out defrosting so they would cook easier. I cooked everything until the noodles were kind of getting browned, then added the seasoning packet and Hoisin at the very last.
