This recipe for Homemade Pickles is a bit spicy, salty, garlicky and just plain crunchy awesomeness! Open up the description below for more information. These are a sour pickle but not real sour, just perfect.
Ingredients:
1 cup everyday white vinegar
2 teaspoons red pepper flakes
1 inch piece of ginger root chopped fine (or more)
1 small shallot chopped fine
2 small green onions chopped small (scallions)
1 Tablespoon sugar
1 and 1/2 teaspoons coarse salt -(OR)-
3/4 teaspoon table salt or canning salt (finely ground salt)
3 small pickling cucumbers
Mix up all your brine ingredients, don't forget the salt like I did.
Then add your sliced cucumbers and refrigerate at least one hour, but much better overnight and even a week later is better.
Good for two weeks kept in the refrigerator.
This makes just a bit over a pint of pickles, so that is why I started in a quart jar. You can use anything to store them and make them. You do not have to use a canning jar. Again this makes just over 2 cups of pickles.
You have to make these! You will be happy you did.
