How to make a Brandied Cherry Sauce to dress up Goat Chops for a weeknight meal. Thank you cousin Christine for the free chops! You can easily cook up some pork chops in place of the goat chops if you wish.
Ingredients:
A few goat chops
salt/pepper to taste and season the chops
1 shallot or some chopped onion (1/4 cup)
1/2 cup dried cherries
1/2 cup brandy
1 and 1/2 Tablespoons sugar or so
1 Tablespoon butter (or more)
1 and 1/2 Tablespoon Balsamic Vinegar
2 Tablespoons plain olive oil for pan frying
Method:
Start with soaking your cherries for an hour.
Dry your chops with some kitchen paper towels
Then salt and pepper them just before you pan fry them.
Add 2 Tbs olive oil to your hot pan and fry your chops for 2 minutes on each side.
Remove chops to a plate.
Add your sugar and brandied cherries to your pan.
Light a match and watch them burn!!
No... they do not burn.
Then turn off the heat and add your butter (2 TBS is better) and your vinegar.
Serve chops with the Brandied Cherry Sauce
You can add 1/2 cup chicken broth to your pan just after the cherries burn down and cook for a couple minutes to reduce broth, then add your butter and vinegar for more sauce.
It's been years and years since I have had goat. The fat on the chops was not all that great, so I suggest to trim the chops of most fat before cooking. It will be easier and more enjoyable to eat for sure!
Cooking for 2 minutes per side (like I did) does not give the fat on the chops to render down and become palatable.
