Treated ourselves to some amazing Filets from Pat LaFrieda Meat Purveyors. The Slow ’N Sear Home and Roam Grill did the job for a perfect steak!
• Started with two nice prime cut filets from Pat LaFrieda Meat Purveyors. lafrieda.com
• Salt brined the filets and put in refrigerator for 24 hours.
• Set up the SNS Travel Kettle Grill direct and indirect cooking.
• Lit the charcoal in the basket and let the grill come up for the indirect side.
• When they reached 90F we flipped them and pulled them off once they hit 120F.
• They each rose to about 127F and once they started to go back down we did the searing.
• Seared for 1 minute a side on each side and then did just 30 seconds per side.
• Final temps finished at 130F+.
• We had 2 perfectly cooked filets!
Summary: The Filets turned out perfect! The Slow and Sear Home and Rome Grill worked perfectly and would do these exactly the same next time. Having the MeatStick Duo V Probes and being able to monitor the temperature while searing is a game changer!
