Fired up the Mesa 400 Monument Grill to cook 2 thick cut pork chops indirectly! Seasoned with PS Seasonings “King Shallot”
• Started with 2 thick cut pork chops.
• Seasoned with PS Seasonings King Shallot about 3 hours in advance.
• Had the 2 outside burners on low and put the pork chops on the top rack in the center of the grill.
• Was shooting for a grill temp of 250F to 300F degrees.
• Once pork got close to 100F degrees, we checked it to see how it looked and flipped it.
• When it got to about 135F we turned all of the burners on high to get some color.
• Pulled the chops when we got to just over 140F degrees and let it rest.
Summary: These turned out fantastic and the flavor of the PS Seasoning King Shallot really added some nice flavor!
