Cooked a beautiful large chicken (Capon) from Pallman Farms in Northeast PA. Seasoned Grillaholics Herbaceous Hen! Rotisserie on the SNS Kettle works great!

• Jack and I traveled to Clark Summit, PA to pick up this 11 lb Capon.
• Tied this up and put on the rotisserie rod and seasoned with Grillaholics Herbacious Hen.
• Got the SNS Kettle running about 350 to 400 degrees and put the capon on the rotisserie with the Slow ‘N Sear in.
• Checked it out when we got to around 1 ½ hours. We also ran into an issue with the coals and lost some temperature due to the ash clogging up the vent holes and the fire started to go down.
• Pulled once we got to 165 in the breast to let the carry over finish this off. Total cook was about 3 hours.
The Capon was from Pallman Farms. @pallmanfarms They are still taking orders for Capons and Turkeys for Christmas if you live near NorthEast Pennsylvania! Check them out! pallmanfarms.com
Summary: Even with the mistakes I made, this still turned out really good and stayed juicy. I thought the legs and thighs would be too far done, but they were not. Herbacious Hen is some amazing flavor.
