My favorite cut of pork to cook! Indirect the entire time on the SNS Kettle! Pit Patriot Hickory Rub was outstanding!
• Started with a nice 8 bone rack of pork from Costco.
• Seasoned it with Pit Patriot Hickory BBQ Grilling Rub.
• Had the SNS Kettle set up with the Slow N’ Sear for indirect cooking at around 300+ degrees.
• Placed the rack of pork on the indirect side until it reached about 86 degrees and then flipped it to promote even cooking. Once it reached 135 we flipped it back. When it got to 145, we checked it and let on for a few more degrees.
• Pulled it off, covered it, and let it rest for about 15 to 20 minutes before cutting into this.
Summary: This was a great cook and rub just helped this get even better! Rack of pork is probably my favorite pork products to cook. I have only seen these around Thanksgiving until Christmas. I do buy 6 to 8 each year to stock the freezer and then once cooked, vacuum seal individual chops for future meals!
