Hey there friends! I’m back in my kitchen today doing one of my favorite things—a big pantry restock of all my baking mixes. I’m refilling jars of cornbread, yellow cake, blueberry muffin, and fudgy brownie mixes so they’re ready whenever I need them. These are lifesavers on busy family dinner days or when somebody shows up and I want to throw together something sweet without making a huge mess. I walk you through each mix, share a few tips, and hopefully give you some ideas to stock your own pantry too.

♦️ Cornbread Mix ♦️
Dry Ingredients (for jar):
1 cup cornmeal (not self-rising)
1 cup all-purpose flour
½ cup sugar
2 tablespoons baking powder
½ teaspoon salt
Wet Ingredients (when making it):
4 tablespoons melted butter
2 eggs
⅔ cup buttermilk (or plain milk)
Baking Directions:
Preheat oven to 400°F.
Bake 15–20 minutes for muffins, or 20–25 minutes for a skillet.
♦️ Yellow Cake Mix ♦️
Dry Ingredients (for jar):
2¼ cups all-purpose flour
1½ cups sugar
1 tablespoon baking powder
¾ teaspoon salt
Wet Ingredients (when making it):
10 tablespoons melted (softened) butter
3 large eggs
1¼ cups milk
2 tablespoons vanilla
2 tablespoons oil (added during mixing step)
Baking Directions:
Place softened butter in stand mixer and beat 1–2 minutes.
Add dry ingredients and beat 30 seconds.
Add milk, oil, vanilla, and eggs, then beat 1 minute more.
Bake at 350°F:
8" round pans: 20–25 minutes
Cupcakes: 15–18 minutes
9x13 pan: 30–35 minutes
♦️ Blueberry Muffin Mix ♦️
Dry Ingredients (for jar):
2½ cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1½ cups freeze-dried blueberries (or ¾ cup if dehydrated)
Wet Ingredients (when making it):
½ cup melted and cooled butter
2 large eggs
¾ cup buttermilk
Baking Directions:
Preheat oven to 425°F and bake for 5 minutes.
Without opening the oven, reduce heat to 350°F and bake an additional 12–16 minutes, until golden and set.
♦️ Fudgy Brownie Mix ♦️
Dry Ingredients (for jar):
⅔ cup all-purpose flour
1¼ cups sugar
½ cup cocoa powder
⅛ teaspoon baking powder
¼ teaspoon salt
½ cup chocolate chips (or a mix of chocolate and butterscotch chips)
Wet Ingredients (when making it):
8 tablespoons melted butter
2 large eggs
1 teaspoon vanilla (or part vanilla, part coffee extract)
2 tablespoons water
Baking Directions:
Preheat oven to 325°F.
Combine butter, sugar, and water in a saucepan. Bring to a boil, then remove from heat.
Stir in vanilla extract. Add eggs one at a time, beating well after each.
Gradually blend in dry ingredients from the jar.
Pour into a greased 9-inch pan and bake 30–35 minutes.
