Tonight, we're back to an old-school "What's for Dinner," the kind where we sit down, share a meal, and talk about life. First up is a rich, hearty buffalo chili made with real bison from a neighbor down the road. Nothing quite warms the bones like a good bowl of chili on a cold night. Then it's on to meal two—Tajin shrimp cooked up in a cast iron pan, served taco-salad style with a bit of peach salsa for good measure. Simple, flavorful, and just the right amount of spice. Finally, we wrap it all up with a classic roasted chicken, slow-cooked with butter, thyme, and onions until the house smells like Sunday dinner at Grandma’s.
Somewhere between stirring pots and setting the table, we talk about what’s ahead for 2025. Plans for the homestead, health updates, and the small things that keep life moving forward. The deep cold has settled in, the chickens are hunkered down, and there’s a long stretch of winter yet to go, but spring is out there somewhere, just waiting.
