We did our version of the Oklahoma smash burger! We used 70/30 Venison/Beef Fat. Boars Head Jalapeño Jack Cheese, Homemade bacon on a Brioche bun! Outstanding!
• Started with 1 lb of Venison mixed with beef fat, 70/30. Homemade bacon, onions, pepper jack cheese and brioche rolls.
• Had the black stone set up with 2 burners on one side on high and the other 2 burners on low.
• Sprayed the Blackstone with cooking spray.
• Made a few strips of our homemade bacon to top the burger.
• Once the bacon was close to done, we moved it over and placed the onions down. Put four 1/4lb balls on top of the onions and smashed the ground venison on top.
• Added some Grillaholics SPG once they were smashed.
• Once the edges looked right, we flipped them and forgot to add more seasoning, LOL.
• Added cheese near the end and pulled them off the grill.
• Toasted the brioche buns.
• Built some nice burger and enjoyed a great meal.
Summary: The venison and beef mixture was perfect for a nice juicy burger. These were excellent and will be doing some more cooks with venison in the future!
