Our local Weis Market now carries Tri-Tip! We reversed sear this nice Tri-Tip on the Rec Tec 590 and seared it off on the Grill Grates. Used All Purpose seasoning from Pit Patriot!
• Started with just under a 3 lb Tri Tip from Weis Markets.
• Seasoned it with Pit Patriot All Purpose Seasoning.
• Had the Rec Tec 590 running at 250 degrees.
• Placed the Tri Tip on until it reached about 80 degrees and then flipped it to promote even cooking. Once it reached 112 we pulled it and turned up the Rec Tec to 550 degrees to get the Grill Grates super hot for the sear.
• Seared the Tri Tip both sides for a total of 4 minutes, flipping every minute. Then pulled it to let it rest.
Summary: This was a perfect rare to low end medium rare. The Pit Patriot All Purpose Seasoning is my favorite for beef! I was impressed by the Tri Tip, it was not marked for the grade, but I would say it was in line with Choice. This was a great cook and rub just helped this get even better!
