Something I never cooked before, but will not be the last! These Mangalista pork collar steaks were outstanding! Check out the how to!
• Started with a 2 amazing looking Pork Collar Steaks from Stone Arch Farm! stonearchfarmllc.com
• Had the SNS Kettle running around 325F.
• Started both steaks indirectly and was shooting for around 80F, but they rose to 90+. At that point we started to sear.
• We were shooting for 145F so we seared a few times until it was close and pulled them to rest. The total cook was about 10 minutes.
• Once these rested, they were right around 150F exactly the way I like my pork.
Summary: These Mangalista is a higher fat content pork and I never did a collar steak before, but these were excellent with the marbling and the flavor!
