Chocolate Fudge Cake Recipe
Cake
175 mL (¾ cup) butter
425 mL (1¾ cups) packed brown sugar
2 large eggs
500 mL (2 cups) all-purpose flour
250 mL (1 cup) almond meal
125 mL (½ cup) cocoa powder
10 mL (2 tsp) baking powder
1 mL (¼ tsp) baking soda
5 mL (1 tsp) coarse salt
170g (6 oz) bittersweet chocolate
425 mL (1¾ cups) buttermilk
10 mL (2 tsp) vanilla extract
2 mL (½ tsp) almond extract
Frosting
310 mL (1¼ cups) butter
560 mL (2¼ cups) powdered sugar
2 mL (½ tsp) coarse salt
140g (5 oz) bittersweet chocolate
5 mL (1 tsp) vanilla extract
1 mL (¼ tsp) almond extract
Method:
Cake
Preheat oven to 180ºC (350˚F).
Grease Two 9" cake tins and line bottoms with parchment paper.
Cream butter, and brown sugar until light and fluffy.
Beat in eggs, one at a time.
Continue beating until mixture is almost doubled in volume and very fluffy.
Melt chocolate in a heatproof jug; let cool slightly, then whisk in buttermilk, vanilla, and almond extract.
Whisk together flour, almond meal, cocoa powder, baking powder, soda and salt.
Alternate mixing flour and the chocolate into the butter mixture.
Divide cake batter evenly between pans, and bake cake until a cake tester comes out clean, 35–45 minutes.
Transfer pans to a rack and let cool completely.
Frosting
Cream butter, powdered sugar, and salt until light and fluffy.
Melt chocolate, let cool slightly, then whisk in vanilla and almond extract.
Gradually beat in melted chocolate mixture until frosting is smooth and shiny.
Cover and chill until slightly firmed up.
Frost the cake.
