ilmango published a very similar design (youtube.com/watch?v=z3Y_cljLdj8) using note blocks instead of pistons, without getting into much detail on the size/layout of a scalable final build.

In all of his infinite wisdom Mojang decided to patch Zero-Ticking and Shaky-Sand fast growth in Java 1.16. In all of our infinete wisdom, we are bring it back with this datapack. Download the zip file below, move the whole folder (still zipped) into the datapacks folder in the saved world you want to bring forced growth back in. Once you load your world, type /reload into chat, press enter and follow the instructions or as shown in the video.
