It’s what kimchi becomes after a 6,000 km journey into the deserts of Central Asia.

In the 1930s, tens of thousands of Koreans were deported across the Soviet Union. Far from home, they improvised. Carrots. Garlic. Chili. Oil.

What started as survival became a staple - and went 1960s viral across the country.

Today, “Korean carrots” are everywhere across the former Soviet world. A dish born from exile, that ended up outlasting the system that created it.
