There are many fried rice recipes out there, but have you ever heard of falafel, cheeseburger or chocolate fried rice? Me neither, so I found out how to make them. I am using the pilaf style fried rice method, which is different from traditional Chinese fried rice - but it’s really easy and delicious!

► Falafel Fried Rice
spice mix:
1 tsp cumin seed powder
1 tsp coriander seed powder
5 pieces green cardamom, ground into a powder
2 Tbsp olive oil + 1 Tbsp later
1/2 onion, diced
2 medium cloves of garlic, minced
spice mix from above
120g (1 handful, or half small can) canned (or cooked) chickpeas
1 cup or 185g rice
salt & pepper to taste, I went with 1/2 tsp salt
1 + 3/4 cups (400g) water
tightly packed handful of parsley/mint/cilantro, finely chopped
1,5 Tbsp tahini
2 tsp water
1/2 cup yoghurt
salt & pepper
1 Tbsp (or more) sriracha
► Cheese Burger Fried Rice
1/2 onion, diced
125g ground beef
1,5 Tbsp panko or breadcrumbs
1 cup or 185g rice
salt & pepper to taste, I went with 1/2 tsp salt
1 + 3/4 cups (400g) water
50g diced dill pickle
1 or more slices of cheddar cheese
ketchup to taste
a few dabs of mustard, to taste
raw onions, thinly sliced (optional)
► Chocolate Fried Rice
1/4 tsp
2 Tbsp butter
1,5 Tbsp cocoa powder (I used Dutch processed)
1/2 tsp instant coffee powder, or a splash of espresso
2 pinches of salt
1 cup or 185g rice
2 cups (480g) milk
2 Tbsp sugar (for mildly sweetened, up to 4 if you like it sweet)
1/4 cup coconut milk, high fat
more liquid (milk or water) if needed
garnish with lots of milk chocolate pieces (!!)
and/or marshmallows
