Thai Food has Tom Kha Gai and Laksa Noodle Soup is a staple all over South East Asia. This easy recipe combines both! this is how to make coconut milk soup with a twist.

► Chicken Shrimp Balls Recipe 🦐🍗🍡
200g raw semi-defrosted shrimp, peeled and deveined
200g chicken breast
1 tsp salt
1 tsp sugar
4 tsp corn starch
1/4 tsp five spice powder
1/4 tsp white pepper powder
about 2-3 Tbsp ice cold water
► Westernized Red Curry Paste, Rempah-Style 🌶️
3 stalks of lemongrass, roughly chopped
3cm of a thumb of ginger, peeled
3 cloves of garlic
1 medium shallot
1/2 Tbsp tomato paste
2 fresh Thai red chilis
1/2 Tbsp dried chili flakes
1/4 tsp salt
1 Tbsp cold water
► Easy Coconut Milk Soup, Laksa / Tom Kha Inspired, serves 2 🍜🍜
1,5 Tbsp Red Curry Paste from above
2 Tbsp cooking oil (peanut, canola...)
700ml dashi stock zest of 1 lime
2 Tbsp good fish sauce
1 Tbsp brown sugar
250ml coconut milk
6 button mushrooms, quartered
8-12 chicken shrimp balls
5-10 medium/small leaves of pak choi
2 generous handfuls of blanched bean sprouts
2 servings of thin rice noodles, soaked in boiling water until ready to eat
topped with fresh cilantro or thai basil and
fresh Thai red chilis
finish with juice of 1/2 lime
