I was reading an article on Cocktailwonk.com entitled "The Jungle Bird Goes to Med School!"
It is an interesting article on Jungle Bird Riffs and Giffard Pineapple Liqueur. Please go read the article, (link below) it's very interesting. But ultimately the Jungle Doctor was created as a Jungle Bird Riff using Giffard Pineapple Liqueur in place of Pineapple juice.
I (as you may know) love Dr. Bird Jamaica Rum from Two James Distillery. A very Incredible rum, and the Jungle Bird is one of my favorite tiki/tropical cocktail of which I have done a riff on myself here on the channel. Long story short..the Jungle Doctor is a wonderful roller coaster of a cocktail with lots of twists and turn and I love it!
Let's make it together now at my home bar...
The "Jungle Doctor" | Cocktail Ingredients
1 1/2 oz. (45 ml) Dr. Bird Jamaica Rum
1 1/2 oz. (45 ml) Giffard Caribbean Pineapple Liqueur
3/4 oz. (22.5 ml) Campari
1/2 oz. (15 ml) Fresh Squeezed Lime Juice
1/4 oz. (7.5 ml) 2:1 Simple Syrup
Garnish with a Fresh Pineapple Wedge
