There's always something going on at the Iberostar Resorts on Mexico's Riviera Maya. By day, the gorgeous beach can't be beat, and just about any type of water sport you might want to do is readily available. By night, the many themed restaurants provide entertainment, the Pyramid Bar is a popular gathering place, or hit the Star Wars Disco for a night of dancing. I happened to visit during Mexican Independence Day, during which the Resorts hosted a huge celebration with Mariachis, regional dancers, and tapas galore.
