BUFFALO CHICKEN RICE BOWLS
Makes 5 bowls

INGREDIENTS
Chicken:
- 2 lbs boneless skinless chicken breast, cubed
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup buffalo hot sauce (Frank's), for tossing
Creamy buffalo-ranch sauce:
- 1 1/2 cups nonfat plain Greek yogurt
- 2 tbsp light mayo
- 2-3 tbsp buffalo hot sauce
- 1 tsp dried dill
- 1/2 tsp garlic powder
- 1 tsp lemon juice
- Pinch of salt
Base and toppings:
- 2 1/2 cups cooked rice
- 3 cups riced cauliflower
- 2 1/2 cups canned black beans, rinsed
- 2 cups chopped celery, shredded carrot, and sliced green onion
- 1 1/4 avocados (1/4 per bowl, sliced fresh)
INSTRUCTIONS
1. Prep first: cube the chicken, combine the chicken spices in one bowl, whisk the sauce ingredients and chill, rinse the beans, chop the veg, and cook the rice.
2. Heat the olive oil in a large skillet over medium-high. Add the cubed chicken and the spices and cook 6-8 minutes, until browned and cooked through.
3. Lower the heat, pour in the 1/2 cup buffalo sauce, and toss to coat. Let it bubble 1-2 minutes, then pull off the heat.
4. In the same pan, saute the riced cauliflower until all the moisture cooks off and it looks dry, then stir it 50/50 with the cooked rice.
5. Build 5 containers: divide the rice base, buffalo chicken, and black beans. Keep the veg, sauce, and avocado separate.
STORAGE
Keep in the fridge up to 5 days. Pack the chicken, rice, and beans together; keep the
cold veg, the sauce cup, and the avocado separate and add them day-of. Reheat just the
chicken-and-rice with a splash of water, then top with the cold stuff and slice the
avocado fresh. Don't freeze these — the rice and veg go mealy.

🌮 FULL RECIPE — CARNE ASADA STREET TACOS (10–12 street tacos)
The Marinade & Meat
- 1½ lbs skirt steak (or flank — slightly leaner), trimmed of surface fat
- ¼ cup lime juice (bottled 100% lime is fully legit in a marinade — save fresh limes for the final squeeze, where the aroma actually matters)
- ½ cup orange juice
- 3 tbsp soy sauce (not traditional-traditional — its the modern taqueria umami move, and Im owning it)
- 2 tbsp olive oil
- 4 cloves garlic, minced
- ½ cup cilantro, rough chopped, stems included
- 1 jalapeño, sliced (seeds in = heat, out = mild)
- 2 tsp cumin · 1 tsp chili powder · 1 tsp salt · ½ tsp black pepper
The Tacos
- 10–12 street-size corn tortillas (the 40-calorie kind)
- ½ white onion, finely diced
- ½ cup cilantro, chopped
- 2 limes, cut in wedges
- Salsa verde or roja (5-minute version below)
- Optional: crumbled cotija (~+15 cal/taco)
5-Minute Salsa Verde
- 6 tomatillos, husked (or one 11-oz can, drained) · 1 jalapeño · ¼ white onion · 1 clove garlic · ½ cup cilantro · ½ tsp salt · juice of ½ lime
Steps
1. Whisk all the marinade ingredients. Steak into a zip-top bag, marinade over, seal, refrigerate 2–6 hours. Never past 8 — the acid turns the surface mushy.
2. Salsa: char fresh tomatillos and the jalapeño in a dry skillet over high heat until blistered, 5–6 minutes. Blend everything until slightly chunky. Refrigerate.
3. Steak out of the fridge 30 minutes before cooking. Broiler on HIGH, rack in the top position, empty sheet pan inside — preheat both a full 10 minutes. Your broiler is a grill turned upside down; youve owned a grill this whole time.
4. Pat the steak VERY dry, discard the marinade, and lay it on the hot pan — it should sizzle on contact. Broil 3–4 minutes per side, flipping once, until deeply charred at the edges. Pull at 130–135°F. Thin skirt moves fast — set a timer and stay close.
5. Rest 5 minutes. Find the muscle fibers and slice PERPENDICULAR to them, then cross-chop small. Against the grain or its chewing gum. Pour the board juices back over the meat.
6. Char each tortilla in a dry skillet, ~30 seconds a side, until spotted and pliable. Stack in a towel.
7. Per taco: meat, a spoon of onion, a pinch of cilantro, salsa, a hard squeeze of lime. Thats the whole taco. Serve immediately.
