Alrighty, today let’s make some Turkish delights or Lokum. Fun fact, these confections were apparently what inspired the creation of jelly beans, so it seems like a pretty ideal time to make dive into it. In North America, these are typically sold with red food coloring and rosewater as the flavoring, but they actually come in a variety of flavors. The recipe I went with today are flavored with vanilla, almond, and pistachio and I covered in coconut, but I’ll give you some tips if you want to change the flavor.

4 cups (804 grams) - Granulated Sugar
1.25 cups (350 mL) - Water
1 tsp - Cream of Tartar (optional)
Cornstarch Mixture
2.75 cups (650 mL) - Water
1.25 cups (140 g) - Cornstarch
1 tsp - Vanilla Extract
1 tsp - Almond Extract
1/2 cup of Pistachios (optional)
Coating
1 cup - shredded coconut
1 cup - Powdered Sugar

![How to make Halwa
Today I would like to make some suji ka halwa, can be made with or without milk. There are a bunch of different types of halwa, some made with nuts or sesame halva, and ours is a semolina halwa. Halwa goes by many names including alawa, alva, haleweh, halava, helava, helva, halwa, halua, aluva, chalva, chałwa. This simple halwa recipe requires no corn syrup and is extremely quick and simple.
Ingredients:
50 grams [1/4 cup] - Clarified butter
150 grams [3/4 cup] - Semolina
100 grams [1 cup] sugar
400 mL [1.75 cups] - Water
6 Green Cardamom pods
Handful of nuts and raisins, I used cashews and almonds
50 mL [1/4 cup] milk
Saffron Optional
Method
Make clarified butter by melting regular butter and skimming the foam off the top.
Measure out and prepare the rest of the ingredients
In a pot place the sugar cardamom and water, and bring to boil.
Warm up a seperate pan to medium heat and once it is up to tempurature add the semolina in.
Stir constantly for 3 minutes to toast the semolina, at which point add the clarified butter (ghee)
add in the nuts
stir and cook for 1 minute, then add the boiling sugar syrup.
Add the milk, stir until the texture changes from sandy to cohesive (about 1 minute)
