Today I am showing you how to make mead, or as it is also known honey wine. The mead I ended up making turned out to have an alcohol percentage of around 11%, and took about 1 month in total. Mead is extremely simple to make, doesn't require heating, or complex additions and timings. It's just a matter of doing the right steps in the right order.

![How to make Halwa
Today I would like to make some suji ka halwa, can be made with or without milk. There are a bunch of different types of halwa, some made with nuts or sesame halva, and ours is a semolina halwa. Halwa goes by many names including alawa, alva, haleweh, halava, helava, helva, halwa, halua, aluva, chalva, chałwa. This simple halwa recipe requires no corn syrup and is extremely quick and simple.
Ingredients:
50 grams [1/4 cup] - Clarified butter
150 grams [3/4 cup] - Semolina
100 grams [1 cup] sugar
400 mL [1.75 cups] - Water
6 Green Cardamom pods
Handful of nuts and raisins, I used cashews and almonds
50 mL [1/4 cup] milk
Saffron Optional
Method
Make clarified butter by melting regular butter and skimming the foam off the top.
Measure out and prepare the rest of the ingredients
In a pot place the sugar cardamom and water, and bring to boil.
Warm up a seperate pan to medium heat and once it is up to tempurature add the semolina in.
Stir constantly for 3 minutes to toast the semolina, at which point add the clarified butter (ghee)
add in the nuts
stir and cook for 1 minute, then add the boiling sugar syrup.
Add the milk, stir until the texture changes from sandy to cohesive (about 1 minute)
