Over time I tend to collect some weird ingredients in my pantry. Every once and a while I like to make some flexible dish where I can use up the ingredients in my pantry or vegetables that are on their way out. Considering y’all may also be in one of these situations right now, I figured today I would show you one of these go to super flexible dishes where you can use up old vegetables or some cans of food you may have laying around in the pantry in an unexpected way. Today's dish is a chickpea pasta, which the first time I heard of I was like whaaaa?

So today I want to make a quick and simple recipe for a dish with ingredients you may have squirreled away. Todays dish is a really awesome pasta dish that has chickpeas in it.



Half a yellow onion
2 to 3 cloves of garlic
zest of one lemon

Juice of one half of lemon
Optional a tin of anchovies
glug of olive oil

Toss in our onions and anchovies
2 Sausages
Some sliced mushrooms
1 teaspoon Cumin
1 teaspoon Red chili flakes
Two cans of chickpeas
1.5 cups of chicken stock or water
Add a handful or two of baby spinach
Two cups of cooked pasta of your choosing

Stir and serve!
