So today I want to go over the science of how to make bread. In this video I want to bake a loaf and explain the steps of what is going on, something that wasn’t entirely clear to me when I started getting into baking. I knew there was a lot going on but, the process is waaaaay more complicated than I ever imagined. I want to cover topics like why do we use bread flour, and what’s the difference between it and all purpose flour. What causes the loaf to stop expanding, what is the importance of gluten, protein, and starch. What is glutelin and gliadin. What is the importance of scoring, kneading, levain’s and autolyses? How does dough hydration play a role, what is gelatinization? I hope you guys enjoy this lengthy deep dive video.
I want to say I am not an expert baker, and you will see this over and over, this video is meant to explain what exactly is going on in bread baking. To give some structure to this video I will be following the basic sourdough recipe and timetable from the wonderful website the perfect loaf. He really has the best guides on his website if you want a consistently good loaf of sourdough bread.

![How to make Halwa
Today I would like to make some suji ka halwa, can be made with or without milk. There are a bunch of different types of halwa, some made with nuts or sesame halva, and ours is a semolina halwa. Halwa goes by many names including alawa, alva, haleweh, halava, helava, helva, halwa, halua, aluva, chalva, chałwa. This simple halwa recipe requires no corn syrup and is extremely quick and simple.
Ingredients:
50 grams [1/4 cup] - Clarified butter
150 grams [3/4 cup] - Semolina
100 grams [1 cup] sugar
400 mL [1.75 cups] - Water
6 Green Cardamom pods
Handful of nuts and raisins, I used cashews and almonds
50 mL [1/4 cup] milk
Saffron Optional
Method
Make clarified butter by melting regular butter and skimming the foam off the top.
Measure out and prepare the rest of the ingredients
In a pot place the sugar cardamom and water, and bring to boil.
Warm up a seperate pan to medium heat and once it is up to tempurature add the semolina in.
Stir constantly for 3 minutes to toast the semolina, at which point add the clarified butter (ghee)
add in the nuts
stir and cook for 1 minute, then add the boiling sugar syrup.
Add the milk, stir until the texture changes from sandy to cohesive (about 1 minute)
